Hello all you beautiful people. So since I moved to England, one began to have cravings for certain American foods...Cheesecake was one of them. Anyone familiar with N.Y. Style Cheesecake knows that the base is usually made with graham cracker crumbs, however in England there is no such thing! So when I looked at the ingredients in British Cheesecake, I saw they used Digestive biscuits! Similar, so it will do. I decided to get fancy and feed my chocolate craving too so have a look at my No Bake British Style Super Chocolatey Cheesecake. But hey, even if you don't bake it, this will take you about 2 hours to make! Leave yourself time!
What you need:
3/4 cup (170g) crushed chocolate digestive biscuits (or if you're in America, graham cracker crumbs!)
1/3 cup (about 75g) butter
2 tbsp Cocoa Powder
1 bar of dark chocolate (I'm not going to tell you what size. YOU be the boss of your chocolate intake but be sensible...I used a whole 200g bar...)
1/2 cup whipping cream (or heavy cream, Americans!)
250 g cream cheese at room temperature
1/2 cup ( about 100g) sugar (caster, preferably, but if you don't have it, don't worry!)
Optional: 1/4 cup of melted white chocolate, but save that for the end of the recipe!
Ya Ready?
1. In a heated saucepan, melt that butter and add the cocoa powder to make chocolatey butter. Mmm. (I didn't actually have cocoa powder at the time, so I used instant hot chocolate mix. Ha!)
2. Next up, add the digestive crumbs to that chocolatey buttery goodness and mix thoroughly until it looks like...
3. Go find your round pan and press the digestive mix into the bottom of it, making sure it's nice and flat. Set aside... or you can put it in the fridge for now!
4. Melt your chocolate and let it cool.
5. In a bowl add the cream cheese and sugar and mix that well!
6. Next up, whip that cream until it's nice and fluffy and peaky! Add the melted chocolate and mix well!
7. Fold the cream and chocolate mixture into the cream cheese until everything is mixed beautifully. Go on, have a cheeky spoonful at this stage.
8. Spread that gorgeous mix on top of your biscuity base and here's where it can get fancy - get that melted chocolate and drizzle it on top. If you're in a rush, but feeling creative, you can get it to look like this!
9. Cover and put it in the freezer for an hour and then transfer it to the fridge for an addtional 30 minutes.
10. Go on. Produce your fancy plate and dish up a slice! Perhaps you garnish it with a few white chocolate shavings, or maybe a strawberry dipped in chocolate? Or if you're me, just destroy it with a fork before you take a picture of the finished dish. Boy it was good. Enjoy!
