Recipes for the students, the poor, the foodies, and the people who don't like measuring! But hey, if you're not any of those, stay anyway! I don't discriminate!

I only put measurements as a guide, but as I don't like to use teaspoons and things myself, I encourage you to get creative! Add more this, add less that, introduce a whole new ingredient, go nuts. And if you have any amazing successes, do share!

Lazy Guacamole

Time to feel a bit festive with my cool, totally healthy and properly lazy Guacamole recipe. It's a great alternative to cheesy dips or salsa, and you can enjoy it with tortilla chips, whack it in a burrito or whatever! Now this is lazy because I only used 2 fresh ingredients. This is good if you didn't go food shopping and happen to have an avocado and a few tomatoes lying around.

What you need:

1 ripe avocado (the riper the better!)
1/4 cup of finely diced tomatoes
1 tsp dried parsley flakes or cilantro (thats coriander too!)
1/2 tsp cayenne pepper
1/2 tsp garlic powder
1 tsp onion powder
juice of 1/2 a lime
salt to taste

Ya Ready?

1. First things first, you need to get into that avocado. If you've never cut one open before, lucky you. I'll show you how!



Cut the avocado lengthwise all the way around the stone in the middle. Go on and twist the top half of the avocado off to reveal...







Now you want to drive your knife into the stone (not hard enough go through the whole thing and injure yourself though!) , twist and remove it and then you'll have a nice stoneless avocado ready for the next step!

2. Scoop all that green goodness out of the skin and mash it up good in a bowl.





3. After making sure your avocado is good and mashed, stir in the diced tomatoes, all the spices, the lime juice and a pinch of salt to taste! Voila, you got lazy guacamole.

4. Get yourself a nice little serving dish, spoon that guac in there and garnish with a little more diced tomato and parsley. Don't forget your tortilla chips!



Oh yea. That's some good lazy guac. Get fancy with your spices too! If you like garlic, put some more in! If you want spicy guac, go on and sprinkle a little more cayenne in. Like it limey? Put juice of a WHOLE lime in. Go nuts.

As a dip, this serves about 2-3 people!

Now eat the food!
