Recipes for the students, the poor, the foodies, and the people who don't like measuring! But hey, if you're not any of those, stay anyway! I don't discriminate!

I only put measurements as a guide, but as I don't like to use teaspoons and things myself, I encourage you to get creative! Add more this, add less that, introduce a whole new ingredient, go nuts. And if you have any amazing successes, do share!

Bruschetta

Why hello there! Welcome to the first, yet not over-the-top, recipe! Since it's summer and sometimes it gets too hot to turn the oven or stove on, why not start with a simple and refreshing Bruschetta. Don't worry about how you pronounce it though; I never do and I seem to get the point across just fine!

What you need:


1 1/2 cups of finely diced tomatoes
1/2 cup finely diced onions
1 glove of garlic, minced
5-6 basil leaves (or if you dont have the fresh stuff, whack a tsp or two of dried basil in)
2 tbsp olive oil (extra virgin if you got it, if not, don't worry about it!)
1 tbsp of balsamic vinegar

Ya Ready?

1. Put your diced tomatoes, onions and garlic in a bowl.


2. Find yourself a fantastic basil plant (like mine!) and steal your leaves. I strongly recommend buying your own basil plant! It smells and tastes so lovely and it makes you look that much more like you're super serious about food.

Now I've heard from someone...possibly my mom? My mom's friend? A friend's mom? Whoever! I heard that it's best not to use a metal knife when chopping any sort of leaf. It makes the edges all brown and horrible and that just will not do for anything at all! No no no. What you should do is tear the leaves to your desired size or if you're super cool and happen to have a plastic knife, use that! Then chuck your basil in the bowl along with the other goodies!



3. Add your oil and vinegar to the bowl and give everything a good, but gentle-ish toss. Add salt and pepper to your liking to bring out those beautiful flavours.

4. Get yourself a pretty bowl and some bread especially for Bruschetta, some Triscuits if that's all you've got in the house like me, or any old crackery breadstuff...garnish with a nice bunch of fresh basil leaves aaaand you're done.



See? Yummy! Presentation is everything! Well...people say it is, but personally, I won't judge you if you just get down and dirty and just eat straight from your mixing bowl. I did it. Not gonna lie.

Now eat the food!
