Recipes for the students, the poor, the foodies, and the people who don't like measuring! But hey, if you're not any of those, stay anyway! I don't discriminate!

I only put measurements as a guide, but as I don't like to use teaspoons and things myself, I encourage you to get creative! Add more this, add less that, introduce a whole new ingredient, go nuts. And if you have any amazing successes, do share!

Cheddar Biscuits

Do you love those delectable biscuits from Red Lobster? Oh, I totally do, trust me! I was having immense cravings for these bad boys after a Red Lobster commercial came on the TV. Now for those who instantly cringed at the thought of cheddar in cookies, let me just say that these are just savoury scones...calm down. Just try em cos these Cheddar Biscuits/Scones are delightful!

Let me just mention that if you're in America, "Bisquick" is totally available to you, however if you're in a country without this crazy versatile mix, here's my version of Bisquick "Biscuit mix" which you need for this recipe!

Biscuit Mix!
Beware, this makes a lot. I usually make a biggish batch of it so I can use it again again. If this is kept in an airtight container, you can store it in the fridge for about 4 months. Awesome right? This mix can also make a wicked fluffy pancake. Add 1 cup of milk and 2 eggs per 2 cups of mix to make em!

What you need:

5 cups (about 700g) plain flour (for a slightly healthier option I used 3 cups of plain and 2 cups of whole wheat!)
2/3 cup (150g) of butter
1/4 tsp sugar
1/4 tsp salt
3 1/2 tbsp of baking powder

Ya Ready?

1. Combine all dry ingredients in a bowl and make sure it's mixed thoroughly

2. Cut in the butter until you get a niiiiiiiice crumbly mixture. Done. Put in an airtight container and keep! But if you're making the Biscuits, scoop out 2 cups of that mix and put in another bowl to get yourself ready for the next recipe

Cheddar Biscuits

What you need:

2 cups of Bisquick (or that Biscuit mix! Use it, it tastes good!)
3/4 cup of buttermilk
1/2 tsp salt
2 tbsp olive oil
1 cup of sharp/mature cheddar (or break the rules. I put 1/2 Pepper Jack and 1/2 Cheddar!)

Yummy glaze:

2 tbsp olive oil
1/4 garlic powder
1 tbsp chopped parsley
1/4 tsp old bay powder (optional, but so good with!)

Ya Ready?

Preheat your oven to 350F/ 180C

1. Thoroughly mix together all of those ingredients (but bot the yummy glaze ingredients! That's for later!) . Make sure the mixture is nice, thick and goopy!






2. On a non-stick baking tray (or you could just put baking paper down if your tray's lost it's non-stickiness) equally spread out 12 dollops of your mixture and flatten them down slightly with the back of your spoon.



3. Put the biscuits in to bake for 15 minutes.

4. While the biscuits are baking, go ahead and make your Yummy glaze! Just mix up that spice & oily goodness so it looks like so... (having a brush helps!!)



5. After the 15 minutes are up, brush that glaze over each of the biscuits and return to the oven for another 5-10 minutes or until the cheese is running out of them and the biscuits are golden brown!

6. Arrange em on a nice platter and serve hot! No butter or anything is needed for this one as these are just so lush on their own!



Mmm....I'm gonna have another one!

Now eat the food!
